New Year New Adventures in the Kitchen!


Happy New Year Everyone! 

I must say this year is going to be so amazing and awesome! I can’t wait for it all. Our Christmas holiday was great to say the least. I am gonna post later this week on that. For now I want to share some of my awesome new adventures in the kitchen.

I love cooking anyways but I have been doing a lot more new recipes and all lately. I think it is because I am about to have this baby girl so I know for a while I won’t be cooking. It will be easy and quick meals. So here are 2 of the new recipes.

Creamy Chicken & Broccoli Casserole

  • 3 Chicken breasts, cooked & shredded
  • 2 cans of cream of chicken soup
  • 1 cup of mayo
  • 1 cup shredded cheddar cheese
  • 1 cup colby & monterrey jack cheese
  •  1 bag of frozen broccoli, thawed & chopped (or can use fresh just steam before hand unless you want it crunchy)
  • salt & pepper to taste. 

Cook chicken & shred. Meanwhile chop broccoli unless you bought it already chopped. Mix all ingredients together. Transfer mixture to slightly grease 2 qt. casserole dish. Heat Oven to 375. Cook for  30 minutes or until Bubbly. And the most important part. SERVE WITH RICE! This is SOOOOO AMAZING!  

Ps My love took this for lunch and made a sandwich and said it was soooo good that was too. ENJOY!

Next Recipe is: Bacon Wrapped Asparagus & Mozzarella Stuffed Chicken Breasts. 

  • Okay measurements for this are hard since I played it by ear. It is easy and all by preference. I do a chicken breast for each. 
  • 2 slices of bacon for each breast. 
  • 4 aparagus spears for each breast. 
  • Mozzarella Cheese, I would say 1/2- 1 cup. Whatever your preference is on how much you want inside chicken.
  • Italian Bread crumbs.
  • Salt & Pepper

Preheat oven to 375. Grease baking pan. Pound each breast with flat side of meat mallet til about 1/4 in thick. Sprinkle with salt & pepper on each side. 

Place 4 spears of asparagus down center of chicken breasts and spread mozzarella cheese over asparagus. Repeat with all chicken breasts. 

Roll the chicken around the asparagus & cheese in a tight tidy roll, wrap 2 slices of bacon around each breast. Then place into dish seam side down.

Sprinkle each breast with about 2 tablespoons of bread crumbs.

Bake in oven til juices run clear. about 30-45 minutes.

Craft & Play Time Our Crazy Life


Good Day To All You Wonderful People!

First let me say a HUGE thank you for all the new followers and the love ya’ll have given me. It is so amazing! I also have found so many new blogs thanks to you guys!

Okay so I have told you I am live a SUPER CRAZY Busy life. Which is totally incredible in itself. This past weekend went by so fast, it is insane. But it was so packed! We loved every minute. We had a fun time decorating our front door for Halloween. Which I will be showing. So simple too, which as us busy moms know scores points in our books. My boss’ birthday was Wednesday. So Friday I made her chocolate cupcakes with a peppermint buttercream frosting, topped with a York peppermint patty (picture posted below).  Her and I eat the heck out of the York Patties since being I have been pregnant. Also I made football cupcakes for my youngest nephews football game. It was supposed to be the last game of the season but the Eagles kicked butt and WON! So now we are in for the Championships! I made green cupcakes with footballs on top (Pictures posted below). Then we had some errands to run. Got to have a nice lunch with my love just the two of us. That was refreshing. Then we headed over to Turkey Creek for the Pizza Party that was going on for my oldest nephew. They won their soccer game as well that day. My son spotted turtles and was in HEAVEN. He has been asking for a fish and a turtle for Christmas. Seeing the turtles there did nothing but encourage that desire. Xavier alsohad a birthday party and trunk or treating to go to as well. Then there was cleaning and projects around the house we worked on as well. We also made homemade playdough which my son turned into growing goo. Silly boy. It was a ton of fun tho! We got so much going on. I must say I LOVE IT! These are moments of making memories. And moments that you get being a mom. Best Job in the world right 🙂

This coming weekend is trick or treating, another birthday, the boys sports games. My sisters birthday as well. Plus lots of other activities. Which I will share as they happen.

I have started planning my sons 4th Birthday Party. Which is gonna be a BLAST! So we got holidays, road trips, Birthdays, & the birth of our beautiful baby girl coming in just a few weeks to few short months. Best part is I get to experience it all with my amazing son & my amazing man. What more can I ever ask for?

This is the Chicken Curry recipe. A favorite. I learned this from my mother in law since It is Thomas’ favorite. One of my favorite memories is in her kitchen learning it.

I am a very busy woman. Between being a full time mom to a VERY energetic 3 year old, I am a full time nurse, then I care for our MANY pets, I also am currently 6 months pregnant, plus taking care of my amazing fiance, our home, and fulfilling the orders I get for my crafts I do. Which I LOVE my busy crazy life. It is always go go go but it is making memories and having a blast on this beautiful adventure & would never want to change it. This being said I do love it when I can get meals cooked fast, even better if they are on the healthy side, & easy.

The dinner we made yesterday was just that. Actually it was made by my son with very little help from me and with my supervision of course. We Made “Mini Chicken Pot Pies”  Now this can be adjusted easily to customize your meat you choose, including no meat at all, customize your veggies, & the soup you use. Also budget friendly.


1 can of refrigerated biscuits

1 think large chicken breast (use any meat you wish)

1 can of mixed veggies (can use fresh or frozen veggies as well)

1 can of cream of chicken soup (can adjust the flavor to whatever you want)


Preheat the oven to 375. Grease a muffin tin.

Cook the chicken in a skillet. (we cut ours in to bite size pieces so it cooked faster and we didn’t have to cut it later.)

In a medium size bowl mix the chicken, cream of chicken soup, & can of mixed veggies.

Roll each biscuit out into bout 5 1/2 in round. Place each in muffin tin, firmly pressed on bottom and sizes.

Spoon the mix into the cups bout 3/4 way full.

Pull the edges of the dough towards the center and pinch to hold in place.

Bake for 22 to 25 minutes. Or til Golden brown.
